Home style aloo gobi is an Indian-style potato and cauliflower dish, kind of like a stir fry. It’s a staple Indian main course and comes together quickly on the stove top.
To prep: Chop cauliflower florets, peel and cut potatoes, cut green chilies, ginger root, and garlic.
Saute cumin seeds, onions, minced garlic, green chilies, and grated ginger.
Add spices and crushed tomatoes.
Add potatoes, cauliflower, and water. Mix. Cover pot and cook until potatoes are fork tender.
