Classic Gujarati kadhi is perfectly balanced with tangy, sweet, and spicy flavors! It’s very popular in Gujarati, cozy to dig into, and can be made stove top or in an Instant Pot.
To prep: Whisk yogurt, spices and besan in a bowl.
Bring mixture to a simmer.
Heat ghee or oil in a small pan and infuse with spices. Add to the yogurt mixture.
Bring kadhi to a boil and let simmer at least 10 minutes. Garnish with cilantro.
