South Indian lemon rice is a delicious comfort food with light spices and a tangy, refreshing taste. It’s can be made in ten minutes using leftover rice.
To prep: Bring leftover rice to room temperature, juice a lemon, and chop up a green chili.
Saute mustard seeds, chilies, dals, cashews, and last a little turmeric powder.
Add room temperature rice to the pan.
Add salt, sugar, and lemon juice.
