Zucchini Curry 


This zucchini sabzi recipe is a simple recipe with summer squash that takes just a handful of Indian spices and 15 minutes.  You can add chickpeas for some protein or potatoes too.

To prep: Chop zucchini, tomatoes, onions, garlic, and chili.

Step one

Saute cumin seeds, onions, garlic, and green chilies.

Add spices, tomatoes, and zucchini.


Mix, cover, and cook a few minutes.
