Ringan Bateta Shaak (Gujarati Eggplant Potato)


Flavorful, rasawala ringan bateta nu shaak  is mouthwatering and made in 30 minutes. 

This popular spiced potato and  eggplant dish is made Gujarati style.

Step one

Add oil and spices to pan.  Add potatoes to pan and mix. Cover and cook 6-7 minutes on low-medium or until potatoes are fork tender


step two

Add eggplants, crushed tomatoes, spices (all except sugar), ground roasted peanuts, and desiccated coconut.


Add water. Cover and cook until it reaches a slightly thicker consistency.
