Potato Spinach Curry Saag Aloo


Mouthwatering aloo saag that’s sure to become part of your weeknight rotation!  Inexpensive to make with potatoes and spinach. Also, it's naturally vegan and gluten-free.


Blanch spinach and make a spinach puree

Saute tomatoes, ginger, garlic, onion, and spices in a little oil.

Add potatoes, cover and cook. Then add spinach puree.
