Heat oil on medium-high in a pot. Add cumin seeds. Once they sizzle/crackle add crushed garlic and finely chopped or blended ginger.
Add pureed fresh tomatoes and tomato puree to pan.
Add vegetable stock and spices. Bring to a simmer.
Turn off gas. Optionally add in chopped cilantro. Serve with a sprinkle of red chili flakes and kasuri methi leaves (optional).
Note - you can substitute the fresh pureed tomatoes and crushed tomatoes for all canned crushed tomatoes - 3 cups total.
The balance of fresh and canned tomatoes is a yummy taste.
Methi masala is optional and not necessary but it adds a unique taste. You can make it at home or find it in Indian grocery stores. It is a Gujarati pickling spice.
