- 1½ cup almond flour 150g
- ¾ tsp cardamom powder
- ¼ cup sugar 50g
- 3 tbsp milk
- ⅛ tsp saffron strands
Crush saffron strands and leave to soak in milk. Preheat oven to 360F.
Meanwhile, mix almond flour, sugar, and cardamom powder in a bowl.
Add saffron milk and mix well to combine and form a dough.
Place dough in between two sheets of parchment paper and roll out with a rolling pin to about ⅛ inch thick.
Using a 2½ inch cookie cutter, cut out circles and place on a parchment paper lined cookie sheet.
Bake in oven 11-13 minutes. Flip once in between.
Check underside to see there is some browning. That is a sign they are done. Remove from oven and let cool completely before eating.
Make sure to store in an airtight container once cooled completely. If it is humid in your kitchen there is a chance they will soften again.
You can crisp these up a bit more if you like later - pop in oven at 350F for 2-3 minutes keeping an eye on them.
