5 Minute Fresh Strawberry Lassi

Strawberry lassi is a delicious Indian drink made in 5 minutes with either fresh strawberries or frozen. I have a tip on an ingredient to use for restaurant style lassi and ideas for variations of the drink.

Equipment

  • 1 knife
  • 1 cutting board
  • 1 Blender I used a Nutribullet

Ingredients

  • 18-20 strawberries washed, green top removed, and halved. Makes 1 cup strawberry puree.
  • 1 cup yogurt or Indian dahi plain yogurt, preferably full fat for creaminess but adjust to your preference
  • ½ cup milk whole milk for optimum creaminess, 2% is delicious as well. For a lighter drink use water.
  • 2-3 tbsp sugar dependent on how sweet your strawberries are - taste and adjust
  • 6 ice cubes
  • cardamom powder, rose water, mint leaves, half and half optional ideas for variation - see notes

Instructions

  • Wash strawberries. Cut off green tops. Slice strawberries into halves.
    Halved strawberry pieces.
  • Add strawberry halves to a blender jar and blend into a puree. I had 1 cup of strawberry puree.

  • Place puree, milk, yogurt, sugar, and ice cubes (if using into jar). You can also add in other optional mix-ins such as cardamom powder now (see notes). Blend.

  • Pour lassi into serving glasses. Optionally garnish with strawberry slices, pistachio pieces, or a little sprinkle of cardamom powder.

Notes

Variations/ optional mix-ins (more in post):
  1. Cardamom powder: ¼ teaspoon cardamom powder is a delicious complementary flavor to strawberry.  You can also alternatively sprinkle a tiny bit on the top when serving.  You get a beautiful aroma of cardamom when taking a sip.
  2. Rose water:  Strawberry and rose are a delight together! It adds a light floral taste.  Start with one - two teaspoons and taste and adjust.  Some rose water brands are stronger than others. 
  3. Mint: I love this during the summer! Add a handful of mint leaves when pureeing the strawberries.
