5 Minute Pineapple Lassi

Pineapple lassi is a delicious twist on an Indian drink made in 5 minutes with pineapple chunks. This tropical lassi is simple and I have a few ideas for variations to make it a party hit!

Equipment

  • 1 Blender I used a Nutribullet

Ingredients

  • cup pineapple chunks I used canned
  • 1 cup yogurt or Indian dahi plain yogurt, preferably full fat for creaminess but adjust to your preference
  • ½ cup milk Whole milk for optimum creaminess, 2% is delicious as well. For a lighter drink use water. For tropical taste use coconut water or coconut milk.
  • 2-3 tbsp sugar dependent on how sweet you'd like it - taste and adjust
  • 6 ice cubes optional
  • ginger, mango, rose water, mint leaves, half and half optional ideas for variation - see notes

Instructions

  • Place pineapple chunks, milk, yogurt, sugar in a blender jar. You can also add in other optional mix-ins such as ginger or mint leaves now (see notes). Blend.

  • Pour lassi into serving glasses. Optionally garnish with mint leaves.

Notes

Variations/ optional mix-ins (more in post):
  1. Ginger: 1/2 inch of ginger
  2. Rose water:  Pineapple and rose are a delight together! It adds a light floral taste.  Start with one - two teaspoons and taste and adjust.  Some rose water brands are stronger than others. 
  3. Mint: I love this during the summer! Add a handful of mint leaves when blending.
  4. Mango: For a truly tropical treat, add in some mangoes for some more flavor. Start with half a cup of mango chunks.
  5. Coconut: Coconut water and coconut milk can be substituted for milk/water in this recipe.  You'll get a light pina colada type taste!
