- 2 cups grated carrots
- 1 tbsp ghee (Indian clarified butter) or butter
- 1/2 cup milk
- 1/4 tsp cardamom
- 1/2 cup sugar
- 1/4 cup crushed or slivered almods/nuts mix to taste
- 1 cup milk powder
On medium heat, melt ghee in skillet and mix in carrots to roast until fragrant, about 5 minutes
Add in milk and cardamom to carrots and continue cooking, stirring occasionally until mixture thickens and bubbles
Add in milk powder and sugar mix and continue cooking again until liquid evaporates – stirring occasionally, about 20 minutes
Add almonds in the mixture if desired or garnish on top
Can be served warm or room temperature
Tastes great with ice cream!
