Karela Nu Shaak (bitter melon Indian style)
Bitter gourd vegetable side or shaak. Traditional Indian Gujarati dish called karela nu shaak or bateta karela shaak as it has potatoes.

- 2 karela 500 g
- 3 small potatoes 385 g
- ½ yellow onion 75 g
- 3 tbsp oil
- 1 tsp mustard seeds rai
- ½ tsp asofetida hing
- 1 tsp salt
- ½ tsp turmeric
- 1½ tbsp cumin/coriander powder dhana jeeru
- 1 tsp red chilli powder
- 1½ tsp sugar
- ½ cup cashews roasted and ground
Heat oil in pan on medium high. Add mustard seeds. Once start popping add asofetida (hing).
Add karela to pan. Top with turmeric and salt. Mix and cover. Cook 3 minutes.
Add potatoes. Mix and cover. Let cook X minutes.
Add red chilli powder, cumin/coriander blend and sugar. Mix. Cook 2 more minutes then turn off stove.
Top with roasted, ground cashews and mix. Serve.
Adding ground roasted cashews gives the dish great flavor and texture
Make sure to give time for the karela to be salted and sweat a bit. Squeezing after giving time to sweat helps to reduce the bitter taste.
