Samosadilla - Samosa Quesadillas (Indian Mexican Fusion)
Samosadillas are a mashup of samosa and quesadilla in an easy to make recipe! A delicious Indian Mexican fusion meal.

Samosa Filling
- 2 large potatoes (boiled) 480 grams
- ½ cup peas (boiled and lightly mashed/crumbled) 75 grams
- 2 tbsp oil
- 1 tso cumin seeds
- ½ tsp hing (asofoetida)
- 2 tsp ginger shredded
- 1 tsp garam masala
- 1 tsp amchur (mango powder) sub extra tsp lemon juice if you don't have
- ¼ tsp red chilli powder
- 1 tsp lemon juice
- 1 tsp sugar
Green Chutney
- 1 cup coriander leaves chopped cilantro
- 1 inch ginger chopped
- 2 medium green chilli peppers
- 3 tbsp dessicated coconut can sub with peanuts or dhalia
- ¾ tsp salt
- 1 tsp sugar
- 1½ tbsp lemon juice
- ¼ cup water to desired thickness start with 1/4 cup
- 1 clove garlic optional
Apple Butter Chutney
- 1 cup apple butter
- ¼ tsp salt
- ½ tsp dhana jeeru cumin coriander powder mix
- ¼ tsp red chilli powder
- 4-5 tsp sugar
- 2 tbsp lemon juice
Quesadilla
- 8 tortilla
- 3 cups cheddar cheese shredded
- tortilla chips optional for crunch
Samosa Filling
Heat oil in pan on medium high. Add jeera (cumin seeds). Once begin to heat up and splutter add hing.
Add ginger and garlic and let sizzle in oil for a minute while mixing. Add potatoes and peas and mix well.
Add all spices except lemon juice. Mix and cook for about 3-4 minutes until heated throughout. Turn gas off and mix in lemon juice. Samosa filling is ready.
You can either boil potatoes and peas on stove in double boiler or use microwave. Microwave method outlined above.
You can also use this cranberry chutney recipe in place of the apple butter chutney.
