Peas Cauliflower Shaak AKA Gobi Matar (Dry)

Cauliflower shaak, also known as gobi matar is a quick healthy and delicious dish. It is one of those dishes that was made regularly at home growing up. Served with some fresh, hot rotli, basmati rice or jeera rice and you are set! It is an easy to make meal. I use fresh cauliflower and frozen green peas.  You can def use frozen versions of both to cut down on prep time.

What is peas cauliflower shaak or gobi matar?

Shaak is the Gujarati word for a vegetable spiced dish.  So peas and cauliflower nu shaak is simply a spiced dish made of peas and cauliflower.  In Gujarati peas are vatana and cauliflower is called flower. If you are looking for other shaaks, I have some other favorites up – Bhinda nu shaak (okra), Cabbage shaak, Valor Muthia Nu Shaak and Methi Bateta.

Gobi matar is the Hindi term for the dish. Gobi means cauliflower and matar means peas.

Easy weeknight meal

There is a reason we used to eat it often for dinner growing up, it is easy to make! As a result, it can def be mixed in to your meal rotation. It is a staple amongst many Indian households.

It is also hearty and filled with vegetables and good for you spices.  Here is a process shot:

How to make gobi matar

Making this dish is a simple process. If you cook Indian dishes often you should have the key spices handy and you are set.  In case you aren’t familiar with Indian spices, I have a guide linked here.

Here is the process:

  1. Prep veggies
  2. Cook spices with veggies
  3. Check to ensure it is done (if knife slices through cauliflower easily it is cooked through)

How do you know the dish is ready?

It usually takes about 12-15 minutes to cook through.  When you can easily cut the cauliflower with a knife you will know it is ready!

Instant Pot Gobi Matar

This is even quicker to make in an Instant Pot. Note, I use fresh cauliflower and frozen peas.  Using frozen cauliflower may change the timing.  I have not tried it with frozen yet.  I will update when I do.

To make in an Instant Pot:

SAUTE Mode:
  • Add oil and jeera.  Once jeera (cumin) sizzles add in hing.
  • Then, add peas and cauliflower to pot.  Top with remaining spices and mix.
  • Close lid
Cook on HIGH 4 minutes then do quick release. Serve!

Equipment

  • pan

Ingredients
  

  • 3 tbsp oil
  • ½ tbsp jeera cumin
  • ¼ tsp hing asofoetida
  • 4 cups cauliflower florets
  • cup peas
  • 1 tsp salt
  • ¼ tsp turmeric
  • ½ tbsp dhana jeeru cumin coriander blend
  • ½ tsp garam masala
  • ½ tsp red chilli powder lal mirch found at Indian store
  • ½ tbsp sugar

Instructions
 

  • Heat oil in pan on medium. Add mustard seeds. Once begins to pop/splutter add hing.
  • Add cauliflower and peas
  • Add spices
  • Mix then cover and cook
  • Will be ready in about 15 minutes.

Notes

Instant pot: saute mode add oil and jeera, once jeera sputter add hing.  Mix in peas and cauliflower.  Add remaining spices and mix.  Close and cook on high 4 minutes and do quick release. Done!
You can use frozen peas and cauliflower to save on prep time
