Easily upgrade your breakfast toast with these ideas. Toast Tuesday is a thing and I thought it’d be perfect to put together some of my fave summer fruit breakfast toast ideas.  Best way to start a day is biting into a crispy, buttery slice of toastie spruced up! The crunchiness with simple added ingredients takes the standard bread and butter toast to a yummy new level.

Breakfast toasts are so simple, you don’t really need a recipe. But sometimes you need a new way to mix things up so I thought I’d outline some of my favorite summer fruit toasts. A few of them are Indian flavor inspired and the others are just straight up summer faves.

There are cream cheese toasts, yogurt toasts and one decadent idea using mascarpone cheese.

Key to a good breakfast toast, the bread!

Of course any bread works, but I prefer whole wheat sourdough bread. It crisps up nice and has a crunchy crust.  If you are in the US, this is my favorite brand.

How to make breakfast toast

Stove toast is greater than toaster toast

The second key piece to good breakfast toast is how you make it! So, I would butter up or Earth Balance up both sides of the bread and toast it on a pan on the stove! Nothing beats the way the flavor gets soaked up and how the bread toasts.  It is super quick and ensures even toasting. It takes about 1-2 minutes per side.

I would use either a non-stick pan or heavy bottom pan.  I’ve added my favorite non-stick pan in my Amazon shop faves here.

Which fat to use for perfectly crispy toast?

Whichever you prefer! Butter or your favorite vegan alternative (such as Eartch Balance) all work for these toasts.  You could also use olive oil. I think it’d taste especially good with the cream cheese toasts.

Here are some of my fave summer breakfast toast ideas using seasonal fruit:

Cherry Mint Mascarpone  Toast 

Mascarpone toast tastes so luxurious! This toasts takes mascarpone, chopped cherries and mint leaves. It needed something to pull it together though. So, I added a drizzle of maple syrup and it was heaven!

Shrikhand Toasts

Shrikhand is a delicious popular Indian dessert. It is made of hung yogurt, cardamom, saffron, mixed nuts and sugar.

If you want to make Greek yogurt shrikhand which is eaten on its own I have a quick recipe on the site.  Here is a link to making a bigger batch of the shrikhand.  You can add in mangos to make mango shrikhand!

Mango Shrikhand Breakfast Toast with Toasted Almonds

 It is made of hung yogurt, cardamom, saffron, sugar and mixed nuts.  This toast is a play on mango shrikhand.  It simply takes some Greek yogurt (I love Fage 5% fat), cardamom, saffron, toasted almonds and a little bit of sugar.  You don’t need much sugar because the mango slices will bring the sweetness to the toast.  This is a favorite delicious treat of mine.

Peach Basil Shrikhand Breakfast Toast

Similar to above, this toast is inspired by shrikhand but there is a difference.  I left out the saffron as I felt the peach and saffron flavors would compete with each other.  So this toast just needs yogurt, cardamom, peaches and fresh basil!

Cream Cheese Toasts

Heirloom tomatoes with basil, mint cream cheese

A simple and super delicious cream cheese toast.  I mix cream cheese with chopped fresh basil and mint leaves.  Top with tomatoes and sprinkle a little black pepper on top. That’s it!

Avocado toast with methi masala cream cheese

One of my ALL TIME FAVES.  I think methi masala is a totally under used spice. It is spicy and salty. I even sprinkle it on pizza. Commonly used in a Gujarati dish, khichu.  I have a recipe I’ll be posting for it soon and will link here.  It is easily found in Indian grocery stores.

This breakfast toast uses cream cheese mixed with methi masala.  Top with sliced avocado. Sprinkle with parmesan and a little extra methi masala.

Ingredients
  

Cherry Mint Mascarpone Toast

  • 2 tbsp mascarpone cheese
  • 6 cherries pitted, halved
  • 5 mint leaves chopped
  • 1 tsp maple syrup

Mango Shrikhand Toast

  • ½ mango sliced
  • 1 tbsp almond toasted, chopped
  • 3 tbsp Greek yogurt
  • 1 pinch cardamom powder
  • 4 strands saffron crushed
  • 1 tsp sugar

Peach Basil Shrikhand Toast

  • ½ peach sliced
  • 5 basil leaves
  • 3 tbsp greek yogurt
  • 1 pinch cardamom powder
  • 1 tsp sugar

Tomato Basil Mint Cream Cheese Toast

  • 2 tbsp cream cheese
  • 5 basil leaves chopped
  • 3 mint leaves chopped
  • 6 cherry tomatoes sliced
  • crushed black pepper to taste
  • salt to taste

Avocado Methi Masala Cream Cheese Toast

  • ½ avocado sliced
  • 2 tbsp cream cheese
  • ½ tsp methi masala
  • parmesan for topping

Instructions
 

Cherry Mint Mascarpone Toast

  • Slather mascarpone on toast
  • Top with cherries and mint leaves. Drizzle maple syrup on top.

Mango Shrikhand Toast

  • Mix yogurt, cardamom, saffron and sugar. Spread on toast.
  • Top with mango slices and toasted almonds.

Peach Basil Shrikhand Toast

  • Mix yogurt, cardamom and sugar. Spread on toast.
  • Top with peach slices and basil.

Tomato Basil Mint Cream Cheese Toast

  • Mix cream cheese, chopped basil and mint leaves together. Spread on toast.
  • Top with tomato slices. Sprinkle with black pepper and salt.

Avocado Methi Masala Cream Cheese Toast

  • Mix cream cheese with methi masala. Spread on toast.
  • Top with avocado slices. Sprinkle with parmesan cheese and a pinch extra of methi masala.
